german chocolate cake

this weekend was really productive!  we were able to get a ton of yard work done and still have time to relax a little bit.  on sunday, my parents came over to our house for dinner to celebrate my dad's birthday.  for dessert, ryan and i made one of my dad's favorites: german chocolate cake.  german chocolate cake is such a treat with its rich coconut and pecan topping.  we decided to make it in a bundt pan, and it turned out great!


german chocolate cake with coconut and pecan topping
adapted from the baker’s chocolate recipe
prep time: 30 minutes
baking time: 30-40 minutes
yields: 1 cake (approximately 16 servings)

cake ingredients:
4 oz. baker’s german sweet chocolate
1/2 cup water
4 eggs (separated)
2 cups all-purpose flour
1 teaspoons baking soda
1 cup salted butter (softened)
1 1/2 cups granulated sugar
1 teaspoons pure vanilla extract
1 cup buttermilk

topping ingredients:
4 egg yolks
12 ounces evaporated milk
1 1/2 teaspoons pure vanilla extract
3/4 cup brown sugar
1/2 cup salted butter
7 ounces shredded sweetened coconut 
1 1/2 cups crushed pecans

directions:
preheat your oven to 350 degrees F.  grease a bundt pan or the bottoms of 3 (9-inch) round pans.  microwave the chocolate and water in a large microwaveable bowl for 1 to 2 minutes until the chocolate is almost melted.  stir until chocolate is completely melted.  beat the 4 egg whites in small bowl with mixer on high speed until stiff peaks form and set aside.  beat the butter and sugar in large bowl with mixer until light and fluffy.  add the 4 egg yolks one at a time, beating well after each.  blend in melted chocolate and vanilla.  add the flour and baking soda alternately with buttermilk.  beat until well blended after each addition.  add the beaten egg whites to the batter.  stir gently until well blended.  pour the batter into the prepared pan(s).  bake for 30-40 minutes, or until a knife inserted in centers comes out clean.  cool the cake in the pan(s) and then remove from pan(s) and cool on wire racks.  once the cake is cooled completely, spread coconut and pecan topping between the cake layers and on the top of the cake.

to make the coconut and pecan topping: beat the egg yolks, evaporated milk, and vanilla in large saucepan with whisk until well blended.  add the brown sugar and butter.  cook on medium heat for 12 minutes or until thickened and golden brown.  stir constantly.  remove from the heat and stir in the coconut and crushed pecans.  allow the topping to cool before spreading on the cake.

grab your pita pockets, it's falafel time!

last week we had so much fun doing baking lessons: "cupcakes 101" with kelly!  so, when kelly mentioned that the next things she wanted to learn how to make were falafels, we jumped at that occasion.  kelly came over last night and we continued our educational series in the kitchen with cooking lessons: "falafel 101"

falafels are incredibly easy to make (and incredibly easy to devour)!  we stuffed our falafels into whole wheat pita pockets with lettuce, tomato, and homemade tzatziki sauce.  it was awesome!  seriously folks, maybe i should start my own show on the food network, haha!




falafel patties with tzatziki sauce
prep time: 20-25 minutes (plus 18-24 hours to soak dried chickpeas)
cooking time: 20 minutes
yields: approximately 12 large falafel patties

falafel ingredients:
2 cups dried chickpeas
1 teaspoon baking powder
1 teaspoon flour
1 small onion (chopped)
6 garlic cloves (chopped)
1/4 teaspoon dried red pepper flakes
2 teaspoons dried parsley
1 teaspoon dried cilantro
dash of salt and pepper
vegetable oil (for frying)

tzatziki sauce ingredients:
6 tablespoons extra virgin olive oil
2 tablespoons vinegar
2 cups plain yogurt
1 cup sour cream
1 cucumber (peeled and diced)
1 teaspoon garlic powder
2 teaspoons fresh dill
dash of salt and pepper

directions:
place the dried chickpeas in a large bowl and cover them with 6 cups of cold water.  soak the chickpeas for 18-24 hours.  the chickpeas will swell and absorb some of the water.  drain the remaining water and rinse the chickpeas.  note: you can use approximately 3 cans of chickpeas (drained) if you do not have the time to soak dried chickpeas.  put the chickpeas in a food processor and coarsely grind until no whole chickpeas remain.  add the baking powder, flour, onion, garlic, red pepper flakes, parsley, and cilantro and process until the mixture is pureed.  season with salt and pepper to taste.  transfer to a large bowl and refrigerate the mixture while the oil is heating.

pour approximately 1/2 inch of oil in a frying pan and heat the oil.  roll the falafel mixture into golf ball size balls and press into patties.  place a few patties into the hot oil.  fry the patties until each is golden brown on both sides.  remove the falafel patties with a slotted spoon and pat with paper towels to remove excess oil.  serve in pita pockets with lettuce, diced tomato, and tzatziki sauce.

to make the tzatziki sauce: whisk together the olive oil and vinegar.  add the garlic powder, dill, and a dash of salt and pepper.  mix in the yogurt and the sour cream.  stir in the cucumber.  chill until ready to use.  (note: you can also make tzatziki sauce with mint and lemon.)

bits of happiness

in the spring we planted a green pepper plant in our garden.  it did nothing for months, until just recently . . . we grew two teeny tiny green peppers!

banana pancakes


there is just something about dancing around the kitchen
while making banana pancakes in your pjs.
it just starts the day off right.


banana pancakes
prep time: 5 minutes
baking time: 10 minutes
yields: 12-15 small pancakes

ingredients:
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk (or milk)
2 eggs
2 tablespoons salted butter (melted)
1 ripened banana
optional: peanut butter

directions:
mix the flour, sugar, baking powder, baking soda, buttermilk, and eggs in a bowl until combined.  mix the melted butter into the batter.  heat a lightly buttered griddle or frying pan on medium heat.  for small pancakes, pour approximately 2 tablespoons of batter onto the griddle.  add desired amount of banana slices to each pancake.  cook until the pancakes are golden brown on both sides.  serve hot with maple syrup (and peanut butter, optional).

trick or treat!


i confess: little effort went into preparing for halloween this year.  maybe because it didn't feel like halloween with all of the ridiculous weather we have had lately.  sure, we bought candy for the trick or treaters and we bought pumpkins from the pumpkin patch.  but, sadly the pumpkins never got carved and zero thought was put into costumes.

so, when we got home from work, in a last minute ditch effort to make it feel like halloween, ryan dressed up as a "lighting designer" and decorated the front porch with orange and purple lights, while i dug my old geisha costume out from the back of the closet.  (this costume was an $11 find 7 years ago at target on halloween day.)  we turned on the "martha stewart living spooky scary sounds for halloween" soundtrack and we munched on candy corn as we passed out candy to the kids in our neighborhood.

in all, we had 170 trick-or-treaters!  170!  (yes, we counted.)  i must say however, that i was sad to see that a majority of the trick-or-treaters never actually said "trick or treat!"  and, i am even more sad to report that fewer of them said "thank you!"  how rude.

as it turned out, with just a little bit of umph, we had a pretty great halloween after all!

happy halloween!

{that's snow outside my window . . . yes, SNOW!}

when i think of halloween in pennsylvania, the last thing i think about is snow.  yet, this weekend (just two days before halloween) we got several inches of snow!  i'm used to having a white christmas around here, but a white halloween is really pushing it.  since the weather was oh-so-cold, after running a few errands on saturday morning, we decided to stay inside for most of the weekend.  we watched halloween movies on tv and baked pumpkin spice cupcakes with cream cheese frosting to bring to work for halloween!   

tonight i am looking forward to seeing ryan's outdoor lighting design for the trick-or-treaters and handing out candy to the little ghouls and goblins in our neighborhood.

pumpkin spice cupcakes with cream cheese frosting
prep time: 15-20 minutes
baking time: 20 minutes
yields: 24 cupcakes

cupcake ingredients:
1/2 cup salted butter (softened)
3/4 cup granulated sugar
1/3 cup brown sugar
2 room temperature eggs
3/4 cup milk
1 cup pumpkin puree
2 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice

frosting ingredients:
8 ounces cream cheese (softened)
4 tablespoons salted butter (softened)
3 cups powdered sugar
1 tablespoon milk
1 teaspoon pure vanilla extract

directions:
preheat your oven to 375 degrees F.  line 24 muffin cups with paper muffin liners.  beat butter, sugar, and brown sugar with an electric mixer until light and fluffy.  add the eggs one at a time.  allow each egg to blend into the mixture before adding the next.  add in the milk and pumpkin puree, beat well to combine.  add the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and allspice.   beat only until the flour is incorporated.  avoid over mixing the flour.  scoop the batter into the prepared muffin cups.  bake the cupcakes in the preheated oven for about 20 minutes, or until a knife inserted in the center comes out clean.  cool the cupcakes for at least 10 minutes on a wire rack.  once the cupcakes are cool, frost the cupcakes with cream cheese frosting.

to make the cream cheese frosting: beat the cream cheese and butter with an electric mixer until smooth.  gradually beat in the powdered sugar alternating with the milk a little at a time, until incorporated.  add the vanilla and beat until fluffy.  optional: you can add 1/2 teaspoon of cinnamon to the cream cheese frosting if you wish.

baking lessons: "cupcakes 101"

i love cooking and baking.  i really, really do.  for as long as i can remember back, i have been helping my mom in the kitchen.  my mom is absolutely amazing when it comes to food, and i have always admired the way that she could whip up a gourmet meal in no time at all without ever breaking a sweat.  my mom says that i started helping her to cook and bake as soon as i could manage to keep myself sitting in an upright position on the kitchen counter.  as a kid, i actually learned basic math and fractions by baking and cutting recipes in half (did i mention that my mom is also a wiz at math?  really . . . she teaches elementary through high school level math.)  my mom seriously has the best patience when it comes to teaching me new things (and i love that she always lets me lick the spatula too!)  now that i'm married and no longer living at home with my parents, i love the occasions when my mom and i can make a meal together.

when i'm not able to cook and bake with my mom, i try to duplicate her recipes as best as possible.  i love being able to cook and bake with ryan now.  he is great in the kitchen too . . . i always said that i would never marry a man who could not cook.  :-)  we have such fun creating recipes together for our family and friend's events.  we always offer to bring dessert whenever someone is having a function!  (at some point, i will post a few pictures of our creations.)

our dear friend kelly is one of our biggest fans.  she is willing to try anything that we make, and is so gracious about it.  so, when kelly said that she wanted to learn how to bake cupcakes, we jumped at the occasion!  last night, kelly came over and we had baking lessons in our kitchen.

kelly's favorite cupcake flavor is red velvet.  typically, i try to avoid red velvet cupcakes like the plague because i am not a fan of the exorbitant amount of red dye that often goes into them.  however, i don't mind making a natural version of red velvet that uses beet juice to dye the batter red instead of food coloring.  i know what you are thinking . . . but the truth is, you don't even taste the beet flavor at all, and it is a really healthy alternative to red food coloring (a trick that i learned from my mom)!

kelly brought cute halloween decorations with her for the cupcakes, and they turned out so good.  when our friend chris found out that we were baking, he stopped by and joined us for a cupcake too!  i had a BLAST teaching kelly how to bake, and she did a great job!  (maybe i should start my own show on the food network, ha ha!)

red velvet cupcakes with cream cheese frosting

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup buttermilk
1 teaspoon pure vanilla extract
1/4 cup beet juice (for color)
2 teaspoons red food coloring (optional)
1/2 cup softened butter
1 1/4 cup granulated sugar
2 room temperature eggs

frosting ingredients:
8 ounces cream cheese (softened)
4 tablespoons salted butter (softened)
3 cups powdered sugar
1 tablespoon milk
1 teaspoon pure vanilla extract

directions:

to make the cream cheese frosting: beat the cream cheese and butter with an electric mixer until smooth.  gradually beat in the powdered sugar alternating with the milk a little at a time, until incorporated.  add the vanilla and beat until fluffy.

here comes halloween!


happy friday!  

if you know anything about ryan, you know that he LOVES lights.  seriously, his specialty is theatrical lighting design.  he has designed lights for a ton of shows, and i think that he is super talented!   he has a great eye for that kind of thing.  his love of lights carries over to our house too.  we even have a light show in our basement . . . i kid you not.  (it is actually a ton of fun to put clothes into the washer and dryer with a disco ball turning in the corner and multi-colored lights moving in time to music!)

so, when ryan found this video on you tube, i just had to share it.  this family in riverside, california created a ridiculously elaborate light show in their front yard last year for halloween.  it is set to michael jackson's thriller, and it is so impressive!  check it out!
