banana pancakes


there is just something about dancing around the kitchen
while making banana pancakes in your pjs.
it just starts the day off right.


banana pancakes
prep time: 5 minutes
baking time: 10 minutes
yields: 12-15 small pancakes

ingredients:
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk (or milk)
2 eggs
2 tablespoons salted butter (melted)
1 ripened banana
optional: peanut butter

directions:
mix the flour, sugar, baking powder, baking soda, buttermilk, and eggs in a bowl until combined.  mix the melted butter into the batter.  heat a lightly buttered griddle or frying pan on medium heat.  for small pancakes, pour approximately 2 tablespoons of batter onto the griddle.  add desired amount of banana slices to each pancake.  cook until the pancakes are golden brown on both sides.  serve hot with maple syrup (and peanut butter, optional).
