winter salad with oranges, dried cranberries, and walnuts


we love salads year round.  in the summertime, fresh fruit takes center stage on our salads.  in the colder months, we incorporate fresh winter citrus into our salads.

i spotted some lovely looking california cara cara navel oranges at the grocery store the other day, and i just knew that they were destined for a salad . . . fresh romaine lettuce, california cara cara navel oranges, dried cranberries, and walnuts.  yum!


this salad is like a reset button after a weekend of eating things that maybe were not the best things for your waist line.  (i'm talking about you, lasagna.)

just think of all the good that the vitamin c in the orange is doing for your body.  the dried cranberries provide just a little bit of sweetness, and the walnuts balance everything out with a deep nutty flavor.

we're just trowing ingredients together on a plate here, so this can hardly be called a recipe.  i couldn't get any easier.


we topped our salad with blood orange olive oil and raspberry balsamic vinegar.  you could, of course, top this salad with any dressing, but this is a great combination.

we love to package our salads up in to-go containers and take them to work for our lunches.  so simple and so refreshing!


winter salad with oranges, dried cranberries, and walnuts
prep time: 5 minutes
yields: 2 servings

ingredients:
1 head romaine lettuce
1 cara cara navel orange
1/3 cup dried cranberries
1/3 cup shelled walnuts

directions:
chop the lettuce into bite-size pieces.  rinse and dry the lettuce in a salad spinner to remove all excess water.  peel the rind off the orange, and slice the orange into small pieces.  in a large bowl, toss the lettuce, orange pieces, dried cranberries, and shelled walnuts.  plate the salad and top with your favorite salad dressing.

fun links


the weather has been so wacky lately.  we have had several snow storms this winter, and each has been followed by a period of rain that washes away the snow and leaves everything looking brown and muddy.  gross.

for the past few days, it has been bitter cold.  like much of the country, we have been experiencing subzero temperatures, and the wind chill factor has been unreal.  yesterday it "warmed up" to 20-something degrees.  today we woke up to yet another snow storm, and it looks like a winter wonderland outside again.  tomorrow the weather forecasters are predicting a high of 55 degrees.  what?!  this is really crazy.

anyway, i am so happy that it's friday today!  this week has been absurdly busy.  unfortunately, it doesn't look like the weekend will be any calmer.  oh well, at least we keep ourselves busy!  since it's friday, here are a few fun links that i found around the internet recently:

i made these spinach and feta quinoa bites for dinner last night in an effort to use up the spinach and feta that i had leftover from my greek-themed birthday party last weekend.  they were really good!

a cat's guide to taking care of your human


we recently came across this commercial for tidy cat's new lightweight cat litter, and we just cannot get enough of it.  we have watched it so many times, and i'm embarrassed to say that we find ourselves quoting it now around the house.  the video is spot on . . . it's like they broke into our house and filmed leko.  the voice over is absolutely hilarious.  it's almost how we imagine leko would sound.  if you are a cat owner, you will appreciate this commercial for sure.

s'mores cake


for my birthday cake this year, i wanted to bring a little piece of summer to the winter.  nothing screams summer like s'mores, so when we celebrated my birthday with our families over the weekend, ryan and i made a s'mores birthday cake for dessert!

this cake was a labor of love, but boy was it worth it!  we put our heads together and combined all of our ideas about how this cake should be constructed.  the end result was a masterpiece.  it was the perfect combination of chocolate, marshmallows, and graham crackers.

inside, marshmallow filling and a layer of graham cracker crust were sandwiched between two layers of chocolate cake . . .


outside, the entire cake was covered in fluffy chocolate buttercream frosting.  for decoration, we lined the sides of the cake with graham cracker segments.  then, we used mini marshmallows as a boarder around the outside of the cake too . . .


we covered the top of the cake with marshmallows, and we used our kitchen torch to toast the marshmallows . . .


as we torched the marshmallows, the entire kitchen started to smell just like s'mores around a campfire in the summertime.  it was glorious.  it made us forget all about the subzero temperatures that we have been having this winter.

the cake was just like a giant s'more.  it turned out great!

s'mores cake
prep time: 30 minutes
baking time: 30-35 minutes
yields: 20-22 servings

cake ingredients:
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 1/2 cups granulated sugar
2 eggs
1 cup buttermilk
1/2 cup vegetable oil
2 teaspoons pure vanilla extract
1 cup hot coffee

graham cracker layer ingredients:
8-9 graham crackers
5-6 tablespoons salted butter, melted

marshmallow filling ingredients:
4 tablespoons salted butter, softened
1 teaspoon pure vanilla extract
1 1/2 cups marshmallow fluff
1 1/2 cups powdered sugar

chocolate frosting ingredients:
1 1/2 sticks salted butter, softened
1/2 cup unsweetened cocoa powder
2 1/2 cups powdered sugar
1 teaspoon pure vanilla extract
2 tablespoons milk
1/2 cup half-and-half cream
1/3 cup ovaltine

directions:
to make the cake: preheat your oven to 350 degrees F.  sift the dry ingredients into the bowl of an electric mixer.  add all of the wet ingredients (except the coffee) and beat well until combined.  stir in the hot coffee.  the batter will be very thin.  set aside.  place the graham crackers in a ziploc bag and seal.  use a rolling pin to crush the graham crackers into fine crumbs.  pour the graham cracker crumbs into a bowl and mix with the melted butter.  add more melted butter as needed, until all of the graham cracker crumbs are evenly wet.  grease and flour the sides of two 9-inch round cake pans, and line the bottoms of the cake pans with parchment paper.  pour the graham cracker crumbs into the bottom of one of the cake pans.  press the crumbs firmly in the bottom of the pan with your hands.  pour part of the cake batter over the graham cracker layer, and pour the remaining batter in the second cake pan until it is about 2/3 of the way full.  (you will have leftover cake batter.  you can bake off the rest of the batter in another cake pan or in smaller ramekins.)  bake the cakes for 30-35 minutes, or until a knife inserted in the center of the cakes comes out clean.  once baked, allow the cakes to cool in the cake pans for 10 minutes, then remove the cakes from the pans and allow them to cool completely on a wire cooling rack.  

to make the marshmallow filling: in the bowl of an electric mixer, cream the butter.  add the vanilla extract and the marshmallow fluff.  whip together, then gradually add the powdered sugar.  add more powdered sugar as needed to reach your desired consistency.

to make the chocolate frosting: in the bowl of an electric mixer, cream together the butter and cocoa powder.  the mixture will be very thick.  add the powdered sugar, vanilla, and milk.  beat to incorporate.  in a separate bowl, stir together the half-and-half and the ovaltine.  pour the mixture into the frosting, and beat until incorporated.  add more powdered sugar as needed to reach your desired consistency.

to assemble the cake: place the cake that has the the graham cracker layer on a cake stand so that the graham cracker layer is facing up.  pipe a ring of chocolate frosting around the outer top edge of the graham cracker layer.  (this will help to insure that the marshmallow filling does not ooze out the sides.)  evenly spread the marshmallow filling inside of the chocolate frosting boarder.  place the cake in the refrigerator for 10-15 minutes to allow the marshmallow filling to harden up.  place the second cake on top of the marshmallow filling.  frost the entire cake with the chocolate buttercream frosting.  place segments of graham crackers around the outside of the cake.  cut several large marshmallows in half with a pair of kitchen scissors.  place the marshmallows, cut side down, on the top of the cake.  use a kitchen torch to toast the marshmallows.  cut several mini marshmallows in the same fashion and place them around the outside of the cake.

my birthday celebration!


over the weekend, our parents came up to our house on saturday to celebrate my birthday!  for my birthday, i wanted a greek-themed dinner, so we made spanakopita, moussaka, greek salad skewers, and hummus with pita.  it was so good!  opa!

we finished off the evening with a s'mores cake and birthday presents.  i had a great time celebrating my birthday with the ones i love!  i can't believe that i am a whole year older now . . . yikes!

two years with leko


over the last two years, we have taken a ton of photos of leko.  there are a lot of cute pictures of leko, but by far, this one is my favorite.  we took this "family portrait" last year on valentine's day, and i absolutely love it.  

today is a really special day in our house.  two years ago today, we brought home our little furry baby!  it's hard to believe that we have had leko for two years now.  (it seems like he has been part of our family for so much longer.)  we have loved having him in our lives for the past two years, and we look forward to spending many more years with him.  he sure is a lover, and we sure are proud kitty parents!  :-)

if you are in the market for a new pet, we highly recommend adopting an animal from a shelter.  there are so many amazing animals out there that are in need of a good home.  adopting leko was one of the best decisions that we have ever made.  he certainly has changed our lives for the better!

goals for the new year


i have never been one for new year resolutions.  instead, i have typically just made a loosely-structured mental list of goals for myself at the start of each new year.  however, last year i decided to take the time to write down a few goals for 2013.

there were six goals that i set for myself in 2013:
1. continue to eat healthy
2. keep going to the gym
3. shift my outlook
4. learn more about photography
5. continue blogging
6. have fun

i'm happy to say that i actually did all of those things in 2013!  over the past year, i really made an effort to continue to eat healthy and to keep going to the gym.  both turned into a wonderful lifestyle change, and i feel so much better because of it!  i also worked on shifting my outlook during this past year.  since it's so easy to get caught up in the hustle and bustle of day-to-day life, it's all too easy to lose focus of what's really important, so i really made a conscious effort to shift my outlook to be more positive.  i certainly still need to work on this more, but overall i found myself taking time to appreciate the little things and trying not to take certain things and people for granted.  that little shift has really made such a difference for me.

in the past year, i tried to learn more about photography too.  i'm far from an expert, and i still have a lot to learn, but i can definitely see a difference in my photos.  i kept blogging during 2013 (my blog turned two years old in october!) and i have really enjoyed blogging as a hobby.  i also had fun this past year.  we went on some amazing trips and did some really amazing things.  (2013 was the year that i got to cross "go to hawaii" off my bucket list!!!)  now, i can't wait to see what this new year has in store for us!

in 2014, i plan to continue my healthy lifestyle by eating right and exercising.  i hope to be a bit more disciplined about doing yoga, and maybe even get myself back into a dance class too.  i want to remember to stay positive and to not dwell on the negative.  i want to challenge myself with my camera, and learn more about photography/videography and photo/video editing.  i plan to continue blogging (and maybe i'll finally even get around to giving this blog of mine a much needed redesign and face lift).  i want to remember to unplug from time to time, and to get better at keeping in touch with friends.  i hope to explore new places, try new things, and carve out a bit of time for myself to learn new hobbies too.

. . . and, of course, i want to have fun and take time to enjoy life and my wonderful family!

ringing in the new year


on new year's eve, my parents came up to our house for dinner.  we had fun cooking together and trying out several new recipes.  we made pork potstickers, chicken fajita bites, spinach artichoke dip, parmesan crackers with roasted red pepper sauce, fried oysters, and roasted sweet potato and carrot soup.  it was all so good!

it's a tradition of ours to see a movie on new year's eve, so after dinner we went to see saving mr. banks.  (if you haven't seen it yet, i highly recommend it.  it was so good!)  when we got home after the movie, we all curled up on the couch and watched the times square ball drop on tv.  it was a great way to spend new year's eve!

on new year's day, we went down to my parent's house for our traditional pork and sauerkraut dinner.  we really enjoyed ringing in the new year with family.  here's to a happy and healthy new year!
