christmas morning cinnamon rolls with cream cheese glaze


if you mention the words "cinnamon rolls" in our house, you are guaranteed to be met with several eye rolls and a few moans and groans.  we love cooking, and we love baking, but we sure hate making cinnamon rolls.  we have tried, time and time again, to make cinnamon rolls, but each and every attempt has left us with some sort of epic baking disaster that has yielded results that can be likened more to hockey pucks than to a soft and flaky breakfast treat.  inevitably, they end up in the garbage can and we end up aggravated   thus, all of our failed attempts have left us disgruntled and bitter with the world of cinnamon rolls.  it has started a war . . . a war between us and cinnamon rolls.

so, it came as no surprise to me that ryan was worried when i announced that i was going to try my hand at cinnamon rolls again, on christmas morning nonetheless.  my dear husband knew that it would take nothing short of a christmas miracle in order to produce a happy wife and a merry christmas if there was yet another cinnamon roll disaster in our house.

i read through countless cinnamon roll recipes, until i was confident that i knew everything there was to know about them, and i made these cinnamon rolls for christmas morning to go along with our breakfast.  i am happy to announce that they were the very first cinnamon rolls that were ever a success in our house!  they were warm, buttery, flaky, and sweet.

at last, victory is ours!  now i can declare our war with cinnamon rolls officially over.  merry christmas, indeed.  


cinnamon rolls with cream cheese glaze
prep time: 25-30 minutes
rising time: 2 hours 45 minutes
baking time: 15 minutes
yields: 16 cinnamon rolls

dough ingredients:
3 tablespoons salted butter
1/2 cup skim milk
1/2 cup half-and-half
3 1/2 cups all-purpose flour (divided)
2 1/4 teaspoons rapid-rise yeast
1/4 cup granulated sugar
1 large egg

filling ingredients:
4 tablespoons salted butter, melted
2 tablespoons ground cinnamon
1/2 cup brown sugar

glaze ingredients:
4 tablespoons salted butter, softened
4 oz. cream cheese, softened
1 teaspoon pure vanilla extract
1 1/2 cups powdered sugar

directions:
for the dough: in a sauce pan, over medium heat, melt the butter.  add the milk, stirring constantly.  warm the milk until it reaches 125 degrees F.  pour the melted butter and warmed milk mixture into the bowl of an electric mixer.  add 1 cup of the flour, along with the yeast, sugar, and egg.  beat on low speed for 3 minutes.  add the remaining 2 1/2 cups of the flour, and mix until the flour is incorporated.  (if the dough is too sticky add more flour in increments of 1 tablespoon.)  turn the dough out onto a lightly floured surface, and knead the dough until it is smooth (about 6-8 minutes).  form the dough into a ball and place the dough into a lightly greased bowl.  cover the bowl with plastic wrap and a kitchen towel.  allow the dough to rise in a warm area until it has doubled in size (about 2 hours).  once the dough has doubled, punch the dough down, and transfer it to a floured surface.  roll the dough out to a 9x11 inch rectangle.

for the filling: spread the melted butter evenly over the dough.  combine the cinnamon and sugar and sprinkle the mixture evenly over the buttered dough.  roll the dough into a log and place the seam side down.  cut the dough into 16 equal slices.  divide the rolls evenly between two lightly greased 9-inch round baking dishes.  cover the baking dishes with plastic wrap and a kitchen towel.  allow the rolls to rise in a warm area until they have doubled in size (about 45 minutes).  once the rolls have doubled, preheat your oven to 375 degrees F.  bake the rolls for 15 minutes, or until the tops are golden brown.  once baked, remove the rolls from the oven, and allow them to cool.

for the glaze: in the bowl of an electric mixer beat the butter and the cream cheese together.  add the vanilla and the powdered sugar and beat until combined.  spread the glaze over the rolls.

chocolate fudge crinkle cookies


recently, we had two of our very good friends over for dinner.  we love entertaining, and we find it to be easy, but it can be a tad stressful when you don't have time to plan.  we found out that they were coming over for dinner only 2 hours ahead of time, so we had to move quickly.  we must have looked like cartoon characters running around in a whirlwind trying to straighten the dinning room chairs, set the table, fold the napkins, fluff the couch pillows, restock the toilet paper in the bathroom, hide the dirty laundry buckets, clean the cat's litter pan . . . this is real life.

since i had fresh chicken breasts in the refrigerator, i decided to make chicken parmesan.  easy peasy.  i picked a simple side dish, and i was good to go . . . that is, all except for dessert.  you see, we love to cook and to bake with all of the things that make recipes delicious: butter, eggs, flour, the list goes on and on.  except, one of our friends has a gluten intolerance (and i can assure you that there is no gluten-free flour in our house).  so, i decided to make a cookie that didn't require flour.  yup, these cookies are gluten free!

chocolate fudge cookies dunked in powdered sugar . . . how can you go wrong?  when you eat these cookies, you will be so distracted by their chocolaty centers that you won't even notice the fact that there is no flour in them.  high five!

not only are these cookies quick and easy to whip up when you find out that you have company coming over, but they are so good too.  your gluten-free friends will be so impressed with you and your gluten-free cookies!  i guarantee it.

chocolate fudge crinkle cookies
prep time: 10-15 minutes
baking time: 10 minutes
yields: approximately 24 cookies
adapted from yammie's glutenfreedom

ingredients:
1 1/2 cups bittersweet chocolate chips (divided)
3 large egg whites
2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch

directions:
preheat your oven to 350 degrees F.  in a glass bowl, melt 1 cup of the chocolate chips in the microwave.  microwave the chocolate chips in increments of 30 seconds until they are completely melted.  stir every 30 seconds until smooth.  once melted, set aside.

in the bowl of an electric mixer, beat the egg whites on high until soft peaks form.  gradually add in 1 cup of powdered sugar.  beat well.  mix in the remaining 1 cup of powdered sugar, along with the cocoa and the cornstarch.  add the melted chocolate and beat until it is completely incorporated.  the dough will be stiff.  stir in the remaining 1/2 cup of the chocolate chips.

roll balls of dough (approximately 1 tablespoon in size) between your hands until they are round.  then, gently roll the balls of dough in additional powdered sugar until they are evenly coated.  placed the coated dough balls on a cookie sheet lined with parchment paper.  bake for 10 minutes, until puffed and the tops crack.  once baked, allow the cookies to cool on the cookie sheet for 5-10 minutes before transferring them to a wire rack to finish cooling.

brown butter ginger molasses cookies


one of the many things that i love about the holiday season is baking cookies.  during this time of the year there is always an assortment of homemade cookies hanging out around the house in christmas-themed cookie tins and penguin-shaped cookie jars.  it's just magical.

baking cookies around the holidays always reminds me of my mom (but then again, baking anything during anytime of the year reminds me of my mom).  browning butter in a small sauce pan on the stove reminds me of my mom too.  (when i was little my mom often made curly noodles covered with brown butter and breadcrumbs and they were such a comfort food, but that is a whole different recipe.)

back to the cookies . . . here's a little math equation for you:
cookies + brown butter = deliciousness and fond memories.


the brown butter gives these cookies an amazing nutty flavor that marries perfectly with the spicy flavor of the ginger and the robust flavor of the molasses.  the granulated sugar on the outside of these cookies adds a sparkle that makes them pretty too.

these cookies have a cake-like texture that is light and fluffy, and they are so very easy to make.  add them to your holiday baking list.  you will love them for sure!


brown butter ginger molasses cookies
prep time: 10-15 minutes
baking time: 10-12 minutes
yields: approximately 20 cookies
adapted from not without salt

ingredients:
3/4 cup salted butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 teaspoons ground ginger
1/4 teaspoon ground nutmeg
1/4 cup molasses
1/2 cup granulated sugar
1 large egg

directions:
to brown the butter: in a sauce pan, melt the butter over medium-low heat, stirring constantly.  once the butter starts to bubble and foam up, watch it very closely.  as soon as the butter begins to turn a deep golden color, remove the pan from the heat and set it aside to cool slightly.

preheat your oven to 350 degrees F.  in a large bowl, sift together the flour, baking soda, and spices to remove any lumps.  pour the sifted dry ingredients into the bowl of an electric mixer.  in a separate bowl, whisk together the molasses, sugar, and egg.  carefully add in the brown butter and whisk until completely combined.  add the mixture to the sifted dry ingredients and beat together until combined.

roll balls of dough (approximately 1 tablespoon in size) between your hands until they are round.  then, gently roll the balls of dough in additional granulated sugar until they are evenly coated.  placed the coated dough balls on a cookie sheet lined with parchment paper.  bake for 10-12 minutes.  once baked, allow the cookies to cool on the cookie sheet for 5-10 minutes before transferring them to a wire rack to finish cooling.

oatmeal-applesauce cookies with maple glaze


today, i'm guest posting over on lauren's blog choosing joy and i'm sharing this cookie recipe!

traditional oatmeal cookies are a favorite of mine for sure.  however, from time to time, i like to switch things up a bit when it comes to traditional recipes.  i made these oatmeal-applesauce cookies and took them to work recently for my co-worker's birthday.  the addition of the applesauce makes these cookies soft.  they are different than traditional oatmeal cookies since they have a cake-like consistency.  the glaze gives them a bit of sweetness without being overpowering too.  everyone at work loved them as a little snack to go along with their morning cup of coffee.

oatmeal-applesauce cookies with maple glaze
prep time: 5-10 minutes
baking time: 14-15 minutes
yields: approximately 20 cookies
adapted from martha stewart

cookie ingredients:
4 tablespoons salted butter, softened
1/2 cup dark brown sugar
1/4 cup granulated sugar
1 large egg
1/2 cup unsweetened natural applesauce
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 1/2 cups old-fashioned rolled oats

glaze ingredients:
1 teaspoon pure maple syrup
1/2 cup powdered sugar
cold water

directions:
to make the cookies: preheat your oven to 350 degrees F.  in the bowl of an electric mixer, beat the butter and sugars together until combined.  add the egg and applesauce and beat for 2-3 minutes.  in a separate bowl, sift together the flour, baking soda, baking powder, and cinnamon.  add the sifted flour mixture to the batter along with the oats and mix until combined.  line a cookie sheet with parchment paper and scoop 1 tablespoon-sized balls of dough onto the cookie sheet.  bake for 14-15 minutes, until the cookies are golden.  allow the cookies to cool completely before drizzling them with the glaze.

to make the glaze: whisk together the maple syrup and the powdered sugar with 1 tablespoon of cold water. add additional water as needed to reach the desired glaze consistency.  drizzle the glaze over the cooled cookies, and let the glaze dry completely before serving.
