chocolate peppermint wafer cookies


a few weeks ago, i said that i love to bake something special and bring it into work whenever one of my co-workers has a birthday.  last time, i made everything cookies.  for my co-worker's birthday this week, i wanted to make a festive holiday cookie.  so, i ended up making chocolate peppermint wafer cookies.  after all, what's better than a sugar cookie dipped in chocolate and sprinkled with crushed candy canes to kick off the holiday season?!

i followed this recipe, which calls for the cookie dough to be refrigerated for one hour, and then rolled out and cut into small squares.  instead, i decided to use my wilton cookie press to give the cookies a cute little detail.  since i used the cookie press, i did not have to refrigerate the cookie dough or roll it out, which saved a lot of time!

the cookies turned out great, and they were a huge hit a work.  by the way, it's impossible to eat just one of these!  ;-)

Cookies look great. I love chocolate and crushed candy canes like peppermint bark. There was a demonstration on Home and Backyard from a bakery in Greentown. She took gingerbread girls and boys and dipped them half way with chocolate and then sprinkled with crushed candy canes. They said that peppermint, chocolate, and gingerbread pair very well together. Must try. I want a cookie.

i never thought of combining chocolate and peppermint with gingerbread. that sounds like an interesting combination. we will have to try it!
