these two . . .


the other day i was running around the house trying to get a few things together, and i thought it seemed oddly quite.  as soon as i turned the corner into the living room, i found ryan and leko on the couch.

by far, one of leko's favorite places to be is on ryan's lap.  whenever ryan sits down on the couch, leko is right there to jump up on his lap.  it's their special spot.  of course i had to grab the camera.  i just can't get enough of these two together.  the cuteness overload kills me.

as charles dickens once said, "what greater gift than the love of a cat."

roasted strawberry mousse pie with pretzel and graham cracker crust


last night we had a family friend over for dinner.  since we knew that it was going to be a hot and humid july evening, we decided to make a slightly adapted version of our grilled bbq chicken pizza along with a side salad for dinner.  easy peasy.

for dessert, we wanted something that was impressive yet fuss free.  so, the night before our dinner guest came over, we threw together this strawberry mousse pie.

this dessert was so easy to put together.  it required minimal baking time (perfect for the summer) and was able to rest in the refrigerator overnight until we were ready to serve it the next day.  now that right there is smart entertaining.


the pretzel and graham cracker crust was the perfect combination of sweet and salty.  who knew pretzels would be such a hit in a crust?  now, we're hooked.  ryan and i have already started to dream up our next dessert creations using pretzel crusts.

the crust really balanced out the strawberry filling.  the filling was the consistency of mousse.  light and fluffy whipped strawberry heaven.  it was decadent, yet it wasn't sweet at all.

the roasted strawberries gave the mousse filling a rich flavor that tasted just like summer.  (it reminded me a little bit of strawberry ice cream.)

our dinner guest was equally impressed by the presentation and the taste of this dessert.  if you are looking for the perfect summer dessert to wow someone, look no further.  this recipe is a keeper for sure.


roasted strawberry mousse pie with pretzel and graham cracker crust
prep time: 20 minutes
total baking time: 30 minutes
yields: 8-10 servings
adapted from rose and henry in the kitchen

crust ingredients:
1 cup salted mini pretzel crumbs
1 cup graham cracker crumbs
1/4 cup brown sugar
8 tablespoons (1 stick) salted butter, melted

filling ingredients:
1/2 lb. strawberries, sliced
1/3 cup plus 1/2 teaspoon granulated sugar, divided
8 oz. cream cheese, softened
1/2 teaspoon pure vanilla extract
1 cup heavy whipping cream
1/4 cup powdered sugar

directions:
preheat your oven to 350 degrees F.

to make the crust:  use a food processor to grind crushed pretzels and graham crackers into fine crumbs (yielding 1 cup of pretzel crumbs and 1 cup of graham cracker crumbs).  in a large bowl mix together the pretzel crumbs, graham cracker crumbs, and brown sugar.  stir in the melted butter until all of the crumbs are evenly moistened.  press the crumbs into the bottom and up the sides of a 9 or 10 inch tart pan or pie plate.  bake for 10 minutes.  once baked, remove the crust from the oven and place it on a wire cooling rack to cool completely.

to roast the strawberries: spread the sliced strawberries out evenly over a baking sheet lined with parchment paper.  sprinkle the strawberries with 1/2 teaspoon of granulated sugar.  bake for 20 minutes.  remove from the oven and set aside to cool completely.  once the roasted strawberries have cooled, puree them in a food processor or a blender.

to make the filling: use an electric mixer to beat the softened cream cheese until soft and smooth.  add in the remaining 1/3 cup of granulated sugar and the vanilla and beat well.  add in the pureed roasted strawberries and beat well.  set aside.  in a separate bowl, combine the heavy whipping cream and powdered sugar.  whip with an electric mixer until stiff peaks form.  do not over beat.  carefully fold the whipped cream into the filling mixture, 1/3 at a time, until it is completely incorporated.  scoop the filling into the cooled crust.  refrigerate for at least four hours before slicing and serving.  serve cold with additional strawberries and fresh mint leaves for decoration.

sweet summer corn pancakes


we are pretty fond of pancakes at our house.  we usually have them for breakfast at least once per weekend.

it's summer and it's sweet corn season.  that sounds like a pretty good excuse to put sweet summer corn into as many recipes as we possibly can.

so, sweet summer corn in pancakes?  sure, why not!


recently, we made these sweet summer corn pancakes.  they tasted just like summer.

even though i was terrified that i was going to accidentally make popcorn in the process, i charred the corn over the gas burner for several minutes.

these pancakes were absolutely delicious.  they reminded me a lot of corn fritters.

the charred sweet summer corn added so much flavor to the pancakes.

these pancakes are going to be one of our favorites this summer for sure!


sweet summer corn pancakes
prep time: 10-15 minutes
cooking time: 10-15 minutes
yields: 10 medium pancakes
adapted from joy the baker

ingredients:
1 ear sweet corn
1 cup all-purpose flour
2 teaspoons baking powder
1/4 cup cornmeal
2 tablespoons granulated sugar
1 cup buttermilk (or milk)
1 large egg
1 teaspoon pure vanilla extract

directions:
remove the husk from the ear of corn and char the corn by toasting it directly over a low gas flame.  rotate the corn until each side is lightly charred.  remove from the flame and allow the corn to cool.  once cool, cut the corn from the ear and set aside.

in a medium bowl sift together the flour and baking powder.  add the cornmeal and sugar.  in a separate bowl, whisk together the milk, egg, and vanilla.  add the wet ingredients to the dry ingredients and mix until combined.  stir in the charred corn kernels.

heat a lightly buttered griddle or frying pan on medium heat.  pour 3 tablespoons of batter onto the griddle for medium-sized pancakes.  flip the pancakes when they start to bubble.  cook until each side is golden brown and the pancakes are cooked throughout.  serve hot with maple syrup.

bits of the weekend . . .

it was unbelievably hot this weekend.  at one point the thermometer read 97 degrees!  leko spent most of the weekend searching out the coolest parts of the house.  throughout the weekend we kept finding him sprawled out in front of various fans trying to keep cool.  the sweat was just dripping off us from the heat and the humidity, so i can only imagine how he felt wearing a fur coat.  poor kitten.

on saturday we went to a friend's wedding.  when the groom walked down the aisle with his parents at the beginning of the ceremony, i pulled out my camera and took the perfect picture . . . only to look down at my camera to see a message flashing across the screen telling me that there was no memory card in the camera!  i can't believe that i forgot the memory card at home.  i took a few pictures of the ceremony on my phone, and then after the ceremony we ran home to get the memory card before the reception.  i swear, i don't know where my head is sometimes.  (i'll just blame it on the ridiculously hot weather.)


we were totally exhausted on sunday morning after the wedding, so we spent a lazy sunday morning at home with french toast and fresh berries for breakfast.  i just love the abundance of fresh berries (at really reasonable prices) during the summer!

to cool off, we spent several hours in the pool on sunday floating around, listening to music, and sipping pina coladas.  (i'll have to share my pina colada recipe soon.)  hello, summer!

we also stuffed our faces with a ton of watermelon this weekend too.  we are taking full advantage of enjoying fresh summer fruit while it is in season.
