cheesecake!


we took the day off work on friday to take a little day trip to rockaway, new jersey with our families.  we visited the buy buy baby store and then headed to the cheesecake factory for lunch!  you can't go wrong with a visit to the cheesecake factory!

will travel for cheesecake!

back in december, we bought cheesecake factory gift cards for us and our parents because there is an awesome promotion each december that gives you certificates for two free slices of cheesecake for every $25 gift card you purchase.  yes, please!

we had to use our certificates before the end of march, so time was ticking.  we finally were able to carve out a free day on saturday when we actually could get off work and it wasn't snowing!  we took a trip to the cheesecake factory and enjoyed a yummy lunch and dessert.  we even had leftovers to take home to enjoy later.

the lighting was dim so the photos are dull and blurry but you get the idea . . .

a nice little escape!


our schedules have been so crazy lately.  even in the middle of a pandemic we've been running from one job to another and we felt like we haven't had a chance to spend any laurie-ryan time together.  we both had the day off on saturday so we decided to make the most of it by taking a day trip to philly to check out some of our favorite spots: ikea, the king of prussia mall, the cheesecake factory, and trader joe's.  it was a nice little escape (and we felt safe because we wore masks the whole time and stayed far away from other people).

we grabbed a late lunch at the cheesecake factory and shared a veggie burger and a salad.  we could not get over how huge the salad was, it was basically a serving platter!  we brought some home and enjoyed the leftovers.  we tried their new cheesecake for dessert which was really yummy!

it was the perfect day-trip getaway and left me feeling refreshed before starting school and getting back to even more crazy this week.

will travel for food!

the weather was gorgeous on sunday (it felt more like a spring day than a mid-january day) and we had the day off work, so we took a day trip to new jersey with my parents for . . . food!  the main purpose of our trip was to have lunch at the cheesecake factory since we all had gift cards and certificates for free slices of cheesecake from christmas. 

while we were in new jersey, we stopped at a brand new trader joe's that just opened up a few months ago for groceries.  on the way home we stopped at another grocery store too.

yup, a whole sunday revolving around driving to new jersey for food!

cheesecake!

we ended up with the day off on sunday, so we finally got around to doing our taxes in the morning (which is not so exciting) and then took a trip to the cheesecake factory with my parents (which is way more exciting than taxes)!

all four of us had gift cards to the cheesecake factory and coupons for free slices of cheesecake, so we just couldn't let those go to waste!  we took a little trip out to the rockaway mall in new jersey and had a great meal at the cheesecake factory followed by yummy dessert.  (we all ended up taking home doggie bags of our meals and our cheesecakes because their portions are so huge!)

it's been over a year since the last time we were at the cheesecake factory, so it was nice to get to go back again!

a celebratory cheesecake date

we both ended up with a day off on sunday so we decided to make the most of it.  we took a little day trip to the rockaway mall in new jersey and had a lunch date at the cheesecake factory.  we have been to other cheesecake factory locations before, but never that one, and ryan had never been to the rockaway mall.  we had a certificate for two free slices of cheesecake that we wanted to use before it expired and we wanted to celebrate some recent work-related good news too, so a celebratory cheesecake date was in order.

for lunch i had the grilled fish tacos and ryan had the bang-bang chicken and shrimp.  both were so good.  for dessert, we split a slice of the coffee and cream chocolate supreme and a slice of the toasted marshmallow s'mores galore.  our lunches were so filling that we ended up taking our cheesecakes home which was great because we got to enjoy them for a few more days because the portions are so humongous! 

since our schedules have been so bizarre, we haven't had much free time to spend together lately, so it was a really nice little date and a fun celebration too!  a few terrible phone pictures from sunday . . .

carrot cake cheesecake


for dinner on easter sunday, ryan and i were in charge of making dessert.  we always love carrot cake for easter, but this year we decided to give our traditional carrot cake a twist.  we made carrot cake cheesecake!

the result was delicious . . . a layer of carrot cake, topped with a layer of cinnamon cheesecake, topped with a sour cream glaze, garnished with chopped walnuts.  it was decadent and a wonderful dessert for easter!


carrot cake cheesecake
prep time: 15 minutes
baking time: 2 hours
yields: one 9-inch round cheesecake (14-16 servings)
adapted from food network

carrot cake ingredients:
1/2 cup walnuts plus more for garnish
1/3 cup granulated sugar
1/2 cup vegetable oil
1 teaspoon pure vanilla extract
2 large eggs
1 1/2 cups shredded carrots
1/3 cup shredded coconut
1 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg

cheesecake ingredients:
3 (8 oz.) packages of cream cheese, softened
2/3 cup sour cream
1/2 cup granulated sugar
3 large eggs
3 tablespoon all-purpose flour
3 teaspoons ground cinnamon
1 teaspoon pure vanilla extract
1 teaspoon fresh lemon zest
2 tablespoons fresh lemon juice

sour cream glaze ingredients:
1/2 cup powdered sugar
2 tablespoons sour cream
1/4 teaspoon pure vanilla extract

directions:
to make the carrot cake, preheat your oven to 350 degrees F.  spread the 1/2 cup of walnuts on a baking sheet and bake until golden and toasted (about 5-10 minutes).  watch to make sure that the walnuts do not burn.  remove from the oven and allow the walnuts to cool completely before finely chopping the nuts.

in the bowl of an electric stand mixer fitted with a paddle attachment, combine the sugar, oil, and vanilla.  beat for 3-4 minutes until well combined.  add the eggs, one at a time, beating well after each addition.  mix in the shredded carrots and coconut.  in a separate bowl, sift together the flour, baking powder, baking soda, and spices.  add the sifted dry ingredients to the wet and beat until combined.  fold in the chopped walnuts.  pour the batter into an ungreased 9-inch round spring-form pan.  evenly spread the batter around the pan.  place the pan on a baking sheet and bake for 25-30 minutes, or until a toothpick inserted in the center of the cake comes out clean.  remove the cake from the oven and allow it to cool completely.

to make the cheesecake, in the bowl of an electric mixer fitted with a paddle attachment, beat the cream cheese, sour cream, and sugar until smooth and creamy (about 5 minutes)  add the eggs, one at a time, beating well after each addition.  mix in the flour, cinnamon, and vanilla.  beat in the lemon zest and lemon juice.

pour the cheesecake mixture over the top of the baked and cooled carrot cake.  wrap the bottom and the sides of the spring-form pan with a large piece of aluminum foil.  place the wrapped pan in a large roasting pan and fill the pan halfway up the sides of the cake pan with water.  bake the cheesecake in the water bath for 1 hour at 350 degrees F.  after 1 hour, turn off the oven and let the cheesecake rest in the hot oven for 30 minutes.  remove the cheesecake from the water bath and allow it to cool to room temperature before covering and refrigerating overnight.

to make the sour cream glaze, whisk together the powdered sugar, sour cream, and vanilla.  spread the glaze evenly over the top of the cheesecake and garnish with additional pieces of chopped walnuts.  refrigerate for at least 30 minutes before serving.
