bacon cheddar waffles

we often eat cereal for breakfast on weekday mornings.  it's simple and it's easy to grab as we are running to work. however, on weekend mornings we like to put the cereal aside and enjoy something a bit more exciting for breakfast.

so, on saturday morning we made these bacon cheddar waffles for breakfast.

these waffles were absolutely delicious, and this waffle recipe is now one of our favorites.

we are big fans of turkey bacon, so we decided to use turkey bacon in our waffles instead of regular bacon.  it's much leaner than regular bacon, and it held up really well in the waffles.

the bacon combined with the cheddar cheese gives these waffles an absolutely amazing flavor.

as the waffles cook in the waffle iron, the cheddar cheese melts into the batter.  (these waffles slightly remind me of cheddar biscuits.)

topped with additional bacon and drizzled with maple syrup, these waffles are the perfect combination of salty and sweet.  such a great way to kick off a weekend morning!

bacon cheddar waffles
prep time: 5-10 minutes
cooking time: 3-4 minutes per waffle
yields: 3 waffles

1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground black pepper
1 cup cheddar cheese, grated
1/3 cup cooked bacon, finely chopped
1 large egg
3/4 cup milk
1 tablespoon vegetable oil

preheat your waffle iron.  in a large bowl, combine the flour, baking powder, baking soda, pepper, cheese, and bacon.  mix to coat the cheese and the bacon with the flour mixture.  in a separate bowl, whisk together the egg, milk, and oil.  add the wet ingredients to the dry ingredients and whisk just until combined.  pour 1/2 cup of the batter into the heated waffle iron and cook for 3-4 minutes, or until the waffles are golden brown. repeat with the remaining batter.  serve hot with maple syrup.

I think I can do breakfast again. They would also be nice for supper too. Bacon and cheese, how can you go wrong.

I was thinking the same thing! I just might make this for breakfast for dinner one evening this week! :)
