smothered chicken

i always love finding new recipes online and adapting them to our particular tastes.

i mean, really . . . god bless pinterest.

last week i found a "copy cat" recipe for smothered skillet chicken similar to a dish served at applebee's.  since i have never had this chicken dish at applebee's, i can't tell you how close it is to the original.  however, we sure did enjoy it paired with a side of cous cous!  we changed the original recipe a bit and chose to put the chicken under the broiler on a baking sheet, rather than in the oven in a skillet.  the broiler helped to melt the cheese and to brown the cheese nicely on top.  what i like about this recipe is that it is so flexible.  you could include any veggies and any type of cheese that you have on hand.


smothered chicken
adapted from yammie’s noshery
prep time: 10-15 minutes
cooking time: 35-40 minutes
yields: approximately 4 servings

ingredients:
8-10 chicken tenders
1 egg
1/2 cup flour
1/4 cup corn starch
2 teaspoons garlic powder
1/2 teaspoon ground black pepper
1 cup chopped peppers (red, yellow, or orange)
1/2 cup chopped sweet onion
1/2 cup chopped mushrooms
2 cloves minced garlic
1 diced tomato
1/2 teaspoon dried oregano
1/2 teaspoon chili powder
1/2 teaspoon paprika
1 cup shredded cheese (or slices of Monterey jack, cheddar, cooper, or pepper cheese)

directions:
in one bowl beat the egg.  in a separate bowl combine the flour, corn starch, garlic powder, and ground black pepper.  dip each piece of chicken in the egg and then coat it in the flour mixture.  heat a frying pan on medium heat with a small amount of olive oil.  cook the chicken until browned on both sides and no longer pink inside.  remove the chicken from the frying pan and place on a foil-lined baking sheet.  add a small amount of butter to the frying pan and sauté the peppers, onion, mushrooms, garlic, and spices.  add the tomato.  place the sautéed vegetables on top of the chicken.  generously cover the vegetables and the chicken with the cheese.  place the baking sheet under the broiler for several minutes, watching closely, until the cheese is melted and slightly brown.

It certainly was "smothered." I served it with cous cous. I'm sure it would be good with rice too.

This sounds really good. Maybe we can try it next time we're at your "restaurant" (although I might have to skip the chili powder because of my tummy). Can't wait for another fine meal at "Houser North" and a chance to visit with you, Ryan, and Baby Leko!

Looks delicious! I think I will have to try it (of course minus the chili). It is making me hungry to chicken parm.

I had some food from a person from India the other day. Oh boy! spicy. But it was homemade so it was not your commerical food laced with salt. A different experience for me. Throat was burning for a bit. I did not save any for dad.
