simple roasted shrimp

last night we had to stay late at work, and when we got home we were exhausted and hungry.  since neither one of us felt like spending a lot of time cooking in the kitchen, we decided to make simple roasted shrimp for dinner.  it was both quick and delicious, and a perfect companion to our parmesan risotto!


simple roasted shrimp 
adapted from cinnamon spice & everything nice
prep time: 5-10 minutes
baking time: 20 minutes
yields: approximately 2 servings

ingredients:
1/3 cup olive oil
1 lime zested
2-3 tablespoons lime juice
1 teaspoon dried thyme
1/2 teaspoon ground black pepper
1 pound medium-sized fresh shrimp (deveined with tails off)

directions:
preheat your oven to 400 degrees F.  in a 9x13 glass baking pan, combine the olive oil, lime zest, lime juice, thyme, and pepper.  bake for 10 minutes.  meanwhile cook risotto, rice, couscous, pasta, etc.

remove the pan from the oven and add the shrimp and garlic.  toss the shrimp to coat them in the oil mixture.  bake for 10 minutes, or until the shrimp turn pink.  serve with  risotto, rice, couscous, pasta, etc.
